I graduate from college in a few weeks and would like to travel around Europe for a month. I hear the best time to travel is in May. Should I wait until then? OR should I go sooner like April because it would allow me to come back earlier and have a head start before other graduates of Spring on finding a job?

Go in May - weather is way better, and there will be more things that are open / accessible. Also, if you’re backpacking, you’ll find more people in the hostels.
